WHere is an easy interpretation of a drink found on our latest menu. This is a batch prepared mix that is bursting with tastes of the Christmas time, which makes it ideal for hosting a holiday party. Save the extra cordial you can use for morning drinks, desserts, or to make additional servings of bikinis.
Bikini
Yields 10 people
To make the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Drink (makes 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
For the Cordial: Place the listed components in a saucepan, heat until it reaches a gentle boil, stirring to dissolve. Then, take off the burner allowing it to cool down fully. Pour to a sterilised bottle, cap it and refrigerate it chilled, it will last for up to four weeks.
For the Premix: Mix the specified liquids into one sizeable container, allow it to infuse for one hour, then pass it through , ideally through cheesecloth, making it fully clarified.
For serving: Add 85ml of your batch mix to a mixing glass containing ice, and stir lightly for about 60 seconds to chill. Pour to a cold coupe glass or equivalent, decorate with some cranberries and finish by giving it a light spray with the mandarin essence over the top.
